Hello!
Thanks so much! Sadly, no one is currently making Kleina or Icelandic Pancakes (Pönnukökur) right now that are gluten free. And any bakeries or cafes selling gluten free treats are not typically Celiac safe (IE, wrapped / sealed) so the risk of cross contamination is there.
